So far from Color Me Vegan, I’ve tried the tomato soup from the red section and the sweet potato tacos from the orange.
Naturally, tonight’s dinner was from the yellow section.
Unlike the past two nights, the yellow color didn’t come from produce; instead,
it came from turmeric.
Have you ever flipped through a cookbook, saw a recipe, and
knew you had to make it?
That’s how I felt with the South African yellow rice. It had
raisins, cinnamon, and lemon zest, but what really got me was that it called
for Earth Balance. I adore Earth Balance butter and I don’t need any excuse to eat it.
This yellow rice was delicious. We ate it with a side of sautéed
kale and chased it down with a cupcake (or three...I'm lying, FOUR).
This dish was extremely simple to prepare. I boiled water and threw the
ingredients in. It simmered on the stove for about 40 minutes and that was
that.
So far, I think my only complaint about Color Me Vegan is
that a lot of the dishes should go with something else. The South African
yellow rice could use a side of protein, the tacos could’ve used some rice, you
get the idea. However, that could easily be remedied with better planning on my
part.
Tomorrow, we’ll be having something green, BUT it’s also the
white day. I told you there would be two in one!
I love the ingredients in the rice. Cinnamon, lemon, and earth balance sound like delicious additions to a savory dish! Now I have to check out the Orange post :)
