Last Thursdsay, I made Linguine with Purple Cabbage for dinner. In addition to the purple (red) cabbage, there is also red onion in this super simple dish.
I really enjoyed eating this big bowl of pasta. I probably should have made a salad to go with it, but I didn't...oh well. Never the less, pasta with onions caramelized in Earth Balance (instead of olive oil, my variation) is super comforting. Another thing I could have done would be to make meat balls (probably out of lentils). That would've been delicious too.
Instead of the pine nuts, I used chickpeas (I think small white beans would be best!), which added some bulk that would've been missing if I had just omitted the nuts.
For Saturday morning breakfast, I made Colleen's peanut butter pancakes. Because I can't seem to follow a recipe without feeling the need to tweak, I added an extra tablespoon of baking powder and a hint of vinegar to make them fluffier. It definitely did, though I think I need to cook them longer on a lower temp that way.
Either way, I definitely enjoyed these pancakes. Bananas, chocolate chips, and real (not fake, as I had) maple syrup would make these pancakes perfect. I bet jam would be good too.
So...the verdict. I think Color Me Vegan is a good cookbook, but I think The Vegan Table is an amazing cookbook (also Colleen's), so if you haven't got either yet, get The Vegan Table first.
My favorite thing we made this week was the Sweet Potato tacos. With the right fixings (beans, rice, and kale), those would be absolutely perfect.
Both dishes sound wonderful! I can't not like anything with peanut butter in it :)
