I realized yesterday that I haven’t posted anything in
almost two weeks. Why? Partially due to homework and partially due to laziness.
My apologies.
I would like to share with you some of the food I’ve been eating
lately.
Earlier this week we made some beans and rice. Ben first
cooked the dried beans. Once they were done, he saved the bean broth and cooked
the rice in it with garlic, onions, and chili powder. We topped it with boiled
sweet potatoes, kale cooked only by being doused in boiling water, homemade guacamole,
salsa, and nutritional yeast.
One night I ate it with a Daiya quesadilla and the next night I stuffed it all into the tortilla. It was delicious both ways.

I swear I took a picture of this fabulous meal, but of
course, I can’t find the pictures now.
Valentine’s Day was pretty ordinary because, being a college
student, I had homework that was due Friday. Being the sweet boy he is, Ben
bought us strawberries and chocolate chips (for melting) to enjoy on Thursdsay.
It tided us both over until tonight when we actually celebrated Valentine’s
Day.
I also enjoyed plenty of smoothies this week. Again, no
pictures of my morning smoothies, but they consisted of frozen blueberries and
blackberries, unsweetened almond milk, water, spinach, banana, and flax seed. I’m
finding that my taste buds are changing and that I prefer more water than
almond milk.
Another smoothie I enjoyed as an energy booster right before
work on Wednesday was carrot-peach. The only ingredients I used were
fresh carrots, fresh banana, and frozen peaches plus water. Next time I’d add
some spinach and flax, more peaches and fewer bananas. Flavor-wise, it was
too banana heavy and I’d hoped it’d be peachy. Next time.

Last night I ordered Thai food with my best friend, Mya. We
shared fried spring rolls and I got pad karie, which is loaded with peanuts,
potatoes, and onions…and tofu, of course.
For breakfast this morning, I finally tried The Vegan Zombie's French toast. I never liked French toast as much as pancakes or waffles. The egg wash would cook into scrambled eggs on the corners and that was nasty to me. But with some good French bread and not a single egg to be found, French toast might be my new favorite.
I topped it with some fresh strawberries and pure maple syrup. It was crispy on the outside, chewy on the inside and had that familiar, cinnamon-y, vanilla flavor associated with French toast.
Finally, this evening, Ben and I enjoyed arugula pesto fettuccine
Alfredo with green beans for dinner and raspberry-chocolate truffles.
I bought the Victoria Vegan Alfredo Sauce, which I’d had in
the back of my head as a “must-try” for a while. I had a moment at my local
natural food store where I was just browsing and randomly stumbled upon it. It
was delicious. Rich and creamy. And the ingredients list was clean and
simple. Cashews, fresh garlic, basil, arugula, that sort of thing. If you ever
find some, I highly recommend splurging on it.
I attempted to make raspberry-chocolate truffles for
dessert, but they turned out more like ice-cream bombs drizzled with chocolate.

Nice catch up post! I totally understand the school/homework/can't do anything else dilemma. I've been having a lot of smoothies, too. The peach carrot looks pretty and I bet the flavor combo is really good. I have trouble getting the flavor of peaches to stand out in my smoothies, especially if they're frozen. If you come up with a peachy tasting recipe, please post it! :)
